and welcome to motherhood

Where every second I turn around and there is something else to be picked up, cleaned or washed. (which is a really big problem for someone as OCD as myself.) But today I have run into our office while pumpkin is down for a nap to try and get out a quick blog post! She's already woken up once after a measly 30 minutes down, but I was able to rock her and get her back to sleep!

Sundays are my day for cooking, and menu planning. I light the candles in my little kitchen altar and begin preparations for the week. I try to prepare as many things as possible so that my weekdays are less hectic! I am not a fabulous cook, and my husband is a swell guy for choking down my new creations (....are you reading this dear?), so often I stick to the same meals and alternate them throughout the weeks. Tonight we will grill out; but meatloaf, crockpot tacos and chicken and dumplings are on the menu for this week.

Crockpot Chicken Tacos
4-5 frozen chicken breasts (I make extra for left overs!)
1 can of corn
1 can rotel
1 can black beans
3/4 of a jar of salsa (enough to cover your chicken)
1/2 block of cream cheese

-Cook on low 6-8 hours, or until chicken shreds when stirred gently. Serve on pan fried corn tortillas with fresh tomato, onion and lettuce.


Beltane is on wednesday and I plan on making a special dinner, followed by the sweetest little strawberry heart pies. I made them once before and thought how suitable they would be for this sabbat. A sabbat of fertility, romance and love....little hearts for my sweethearts! :) We plan on taking a May Day basket of flowers to grandma (pumpkins babysitter) and I'll crown myself the mayday queen. A little toast with some mayday punch (...which will really be a glass of box wine) and my mayday celebration will be complete!

Last but not least, I am reading a new Phillipa Gregory book ( my favorite!). I purchased the book back in August, but am only now finding the time to read it. I have to have my copy of british history for dummies next to me, to make sure I have all of the characters complete. But so far I am really enjoying the story. The main character is Jacquetta of Leoxumberg (not sure on that spelling, just off the top of my head!) and is said to have "powers".. ie: reading tarot cards, scrying, etc. Its a good mix of history with a little witchy twist :)
