Easy Chicken/Turkey Potpie... (for the undomestic goddess!) ;)
-1/2 stick butter
-2 tbs flour
- small package of frozen, mixed veggies
-16 oz. chicken broth
-1 c. milk
-1 c. prepared rotisserie chicken/turkey
- 2 premade pie crust
- seasonings of choice (I like garlic pepper!!)
-Preheat oven to 350 degrees F.
- In a large pot, sauté veggies in butter until thawed, sprinkle with flour and stir to evenly coat.
- Over low heat, combine milk and chicken broth with the veggies, stir constantly until thick and bubbly.
- Stir in chicken/turkey
- Season mixture as desired
- Prepare one pie crust in a pie pan/casserole dish, just as if you were baking a pie. Fill with veggie/chicken mixture and top with second pie crust. Pole holes/slits to allow heat to escape.
- Cook for 30-45 minutes, or until pie crust is golden brown
