Kitchen Witch Wednesday

I've been staying home with my baby and growing belly, and have had a lot more time to go more in depth with my cooking... But today, I'm posting one of my simple and regular favorites that we are having for dinner tonight!

Crockpot Vegetable Soup:

- 1 lb. prepared ground beef
- 1 box beef broth (48oz.)
-1 can tomato sauce (15 oz.)
- 1 bag frozen, mixed veggies (we use the pea, corn, carrot and green bean medley)
- 1 1/2 cup penne noodles (give or take a little on your preference! Sometimes I use the whole box)

Start by cooking (well done please!) your beef in a skillet, and drain excess grease. I like to season my ground beef with garlic pepper and a pinch of red pepper. Place beef into crockpot, add beef broth, tomato sauce and veggies, simmer on low 4-6 hours... add any additional seasonings to fit your taste. We use garlic salt and Italian seasoning. The last 45 minutes before eating, turn off your crockpot and let cool. Twenty minutes, to half an hour before eating, add the noodles and stir well. Check the noodles frequently to make sure they aren't getting gummy or soggy.... yuck! Once your noodles are cooked thoroughly, time  to eat! Serve with corn bread...

Tonight I am making a gluten free version of this with gfree cornbread for my celiac siblings... Excited because Barilla now makes a gfree penne for only $1.88. ... The prices are becoming more reasonable! Hurrah!
